Avocado Toast. The Low Down.

The struggle is real:
We get it, mornings can be hectic. You hit the snooze button more than a time or two, roll out of bed, shower, maybe make your bed, brush those pearly whites, and by the time you need to get your day moving along, you might be running a little behind schedule. But don’t cheat yourself on breakfast, we know you’re better than that. According to Rush University Medical Center, when you eat breakfast your body knows it has calories to burn off, in turn boosting your metabolism for the day. Behold, avocado toast! The prep time is quick and you can even take it to go. This meal is power packed with your daily dose of antioxidants, vitamins and minerals. Hello energy booster! With two main ingredients and a few yummy additions, consider yourself set for the day.

Fun Fact:
Avocados are a single-seeded berry which classifies them as a fruit. Let’s just say, if you’re not eating it, you should start now.

Quick tip:
Save some money! You don’t need to worry about buying organic, due to avocados thick skin. Its outer layer keeps those pesky pesticides from getting inside.

Health benefits:
Avocados are loaded with vitamins and minerals such as B6, Folic acid, and Vitamin C, giving you an extra boost to your energy levels while supporting your immune system. This magical fruit also contains potassium, copper, and magnesium. These minerals help lower your blood pressure, aid in the continuous growth and development of the brain, bones, and heart, while promoting a healthy nervous system. Let’s not forget to mention, avocados contain rich antioxidant properties, decreasing the signs of aging from the inside and out. With all that being said, the latest craze behind the avocado should not go unnoticed. It’s just an added bonus that they are absolutely delicious.

Ingredients:

o 1 slice of bread (Ezekiel or Sourdough is recommended)
o ½ Avocado
o Extra virgin olive oil
o Feta or goat cheese
o Salt and pepper
o Chili flakes or Sriracha

How to make it:

1. Toast your bread of choice to a beautiful shade of brown.
2. Grab a bowl and scoop out half an avocado.
3. Drizzle in the olive oil.
4. Add salt and pepper to taste.
5. Mash everything together in the bowl.
6. Spread the avocado mash over the toast.
7. Sprinkle with feta or goat cheese (optional).
8. For extra heat, add chili flakes or a few drizzles of Sriracha.
